Jimbee Snack with spinach curry
A simple and healthy recipe to enjoy your Jimbee Snack Lettuce
The recipe
Method:
- Sauté the onion, garlic and chopped ginger in a pan with extra virgin olive oil. When the onion starts to turn clear, add the spices and the tomato paste. Cook for one minute.
- Now add the vegetable stock, then the spinach and coriander. Allow to cook for 10 minutes, then at the end, add the coconut milk or coconut yoghurt.
- Take a Jimbee leaf and wash it. Then use a spoon to serve the curry. Add a little sugar-free coconut yoghurt and sesame seeds.
Ingredients:

- 1 onion
- 1 clove of garlic
- 1 piece of fresh ginger
- 1 teaspoon of yellow curry powder
- 1 teaspoon of turmeric with pepper
- 1 teaspoon of cumin
- 1 tablespoon of tomato paste or 2 tablespoons of tomato paste
- 1 1/ 2 cup of vegetable stock
- 300g fresh spinach
- A handful of coriander
- A splash of coconut milk or coconut yoghurt (optional)
- Sesame seeds to serve
