Jimbee Snack filled with tabbouleh
A simple and healthy recipe to enjoy your Jimbee Snack Lettuce
The recipe
Method:
- Add the extra virgin olive oil and lemon juice to a bowl and mix thoroughly.
- Wash the greens, dry them thoroughly and finely chop them.
- Put them in a large bowl. Add the cooked quinoa, the dressing and some salt and pepper. Mix and set aside.
- Take a Jimbee leaf and wash it and put it on a plate. Then use a spoon to put the tabbouleh onto the leaf. Add a final squeeze of lemon juice and serve.

- ¼ cup of cooked quinoa
- 2 spring onions, chopped
- 1 cup of fresh chopped parsley
- 1/4 cup of fresh chopped mint
- 1 tomato
- Juice of one lemon
- Salt and pepper to taste
