Jimbee Snack filled with tabbouleh

A simple and healthy recipe to enjoy your Jimbee Snack Lettuce

The recipe

Method:

  • Add the extra virgin olive oil and lemon juice to a bowl and mix thoroughly.
  • Wash the greens, dry them thoroughly and finely chop them.
  • Put them in a large bowl. Add the cooked quinoa, the dressing and some salt and pepper. Mix and set aside.
  • Take a Jimbee leaf and wash it and put it on a plate. Then use a spoon to put the tabbouleh onto the leaf. Add a final squeeze of lemon juice and serve.

  • ¼ cup of cooked quinoa
  • 2 spring onions, chopped
  • 1 cup of fresh chopped parsley
  • 1/4 cup of fresh chopped mint
  • 1 tomato
  • Juice of one lemon
  • Salt and pepper to taste
  • 1/4 cup of extra virgin olive oil
