Jimbee Snack with Catalan style vegetables

A simple and healthy recipe to enjoy your Jimbee Snack Lettuce

The recipe


  • Preheat the oven to 200°. Wash the aubergine and pepper.
  • Cut the aubergine in half and make diagonal cuts in the flesh, the place on a baking tray. Cut the pepper in half and remove the seeds. Place it on the same baking tray, together with a few whole garlic cloves.
  • Roast for 40-45 minutes with a little extra virgin olive oil and salt, until cooked.
  • Leave the aubergine and pepper to cool so that the seeds and skin can be removed, then add to a plate with the roasted garlic. Add a pinch of salt, parsley and extra virgin olive oil.
  • Take a Jimbee leaf and wash it. Then use a fork to fill each Jimbee leaf.

  • 4 -5 cloves of garlic
  • Extra virgin olive oil
  • Salt
  • Fresh parsley
