The recipe
- Chop or grate the cauliflower until it is the size of grains of rice.
- Chop the tomatoes into cubes.
- Chop the spring onions
- Chop the herbs
- Mix all the ingredients
- Dress with lime and EVOO and serve on snack lettuce

- 100g feta cheese
- 4 plum tomatoes
- 2 spring onions
- 10g coriander
- 10g parsley
- 1 lime
- Salt
- 20g rocket
- 20g olive oil
