The recipe

  • Chop or grate the cauliflower until it is the size of grains of rice.
  • Chop the tomatoes into cubes.
  • Chop the spring onions
  • Chop the herbs
  • Mix all the ingredients
  • Dress with lime and EVOO and serve on snack lettuce

  • 100g feta cheese
  • 4 plum tomatoes
  • 2 spring onions
  • 10g coriander
  • 10g parsley
  • 1 lime
  • Salt
  • 20g rocket
  • 20g olive oil
  • Jimbee Snack Lettuce leaves
